Potato, Onion and Mushroom Fritatta

1 potato, sliced thinly
1/2 onion, sliced thinly
4 ounces mushrooms, sliced thinly
8 eggs, beaten and seasoned with salt and pepper
1 cup grated cheese 
salt and pepper 
butter

  • Begin by sauteeing the potato, onion and mushrooms in 1 tablespoon of butter.  Season with salt and pepper and set aside.
  • Preheat the oven to 350 degrees.  
  • In a different skillet, melt 2 tablespoons of butter and add the beaten eggs and potato mixture.  
  • Sprinkle cheese on top.  
  • Put skillet (make sure it is oven-safe) in the oven and bake until the top is set (12-14 minutes)
