Hearty Whole Wheat Waffles

1 1/2 cups King Arthur white whole wheat flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
1 large egg, separated
1 1/2 cups milk
1/3 cup melted butter, or vegetable oil

  • Whisk together the flour baking powder, salt and sugar.  
  • In a separate bowl, whisk together the egg yolk, milk and butter or oil.  
  • In a separate bowl, whisk whites until they form stiff peaks, fold into batter.
  • Cook the waffles in a waffle iron.
